Banana Bread
Ingredients
125g of soft butter (extra doesn't hurt) | ||
1 cup brown sugar | ||
2 tsp vanilla | ||
3 eggs | ||
2 cups self-raising flour | ||
1 tsp cinnamon | ||
1/2 tsp of bicarbonate soda | ||
3 ripe bananas | ||
1/2 cup milk |
Method
- Preheat the oven to 160°C (320°F) . Grease and line a 6-cup loaf pan with baking paper.
- Using a mixer or electric beater, mix soft butter, brown sugar and vanilla together until light and creamy. Mixing well between each add each egg one at a time. Sift self-raising flower, cinnamon and bicarb soda over mixture. Mash bananas and stir into mixture with the milk until well combined.
- Spoon mixture into prepared pan and smooth top. Bake for 1 hour and 10 minutes or until cooked when tested with a skewer.
- Stand for 5 minutes before transferring to a wire rack too cool.
- Slice and Serve
