Denmark's First and only sushi restaurant with eco-label. We have now been labeled with a Silver eco-label since approx. half of our goods / raw materials are from organic production. Our salmon are usually organic salmon farmed in Ireland. In addition, we use organic sushi rice from Italy as well as a large number of other raw materials from organic farming. Almost all our vegetables are organic, but also soy sauce, tofu, miso and beverages incl. beer and wine and we are still working to replace even more of our raw materials with organic products. But also on the nonfood side we are looking at more environmentally friendly solutions. For example, our disposable packaging and services have become more environmentally friendly, we sort the waste and have replaced the plastic cloths in the kitchen with cotton cloths.
