( Just too much pork around here)Hush Puppies..WOW these were very good.. The size of golf balls and full of flavor. Even cold they were good.OMG the biscuit I loved. Plus they gave you REAL butter. Excellent touch!!Now the cole slaw. Eh.. Creamy chopped fine needs a bit more taste…Not too sweet or sour. Needs work.The RIBS.. Real ribs for real meateaters. NO phoo phoo baby backs. Good size very meaty. Almost fall off the bone(real carnivore want that tug). Season fine with just the right smoky taste. Not over powering.Chi chat.. I hate vinegar base sauce. Even in my hot sauces NOPE… Tomato base sweet and spicy that’s for me.But I had their version of a sweet sauce. Not bad. Needs more sweetness ( brown sugar ,honey or molasses.) plus kick it up with some hot pepper.My order was quickly delivered. Folks were great. I did not mind the 20+ minute commute for this from The Cape..Over All very good.
Disappointing Ribs. I had lunch there recently with my old friend Bill who is a really nice guy. He really didn’t know of a place to go and I had heard of your place before. My aunt has lived in the area most of her life and had mentioned Hickory barbecue. I have never been much of a person to like franchised restaurants and always try to do business with locally owned and operated places. I actually tried to email this to the owners but could not find an email address. Now I have been tempted to leave a review of your restaurant that is mostly bad as most of my meal was somewhat disappointing. I hope you can appreciate the suggestions I make here. The most disappointing part of the meal is what we actually came there for which was the ribs. They were dry with no flavor. The name of the restaurant hickory barbecue would lend itself to anyone thinking that they were going to get hickory smoked ribs. I am sure to switch to smoking meats would be quite a change in the kitchen but it would also be welcome by most if not all of your patrons. A smoker can even be good advertising for you. Just the smell of wood smoke in an area will attract people. I would bet your three best-selling items would be beef brisket pulled pork and ribs all smoked in the smoker of course.I found your barbecue sauce to be quite good. I would say it is a mustard-based North Carolina style barbecue sauce. My friend however would have preferred a sweet barbecue sauce as some people do. Other people prefer a barbecue sauce that is somewhat spicy. Why not offer all three on the table. People love to try different flavors. Barbecue sauces are not terribly expensive to make and you could keep them on the table in food grade containers such as ketchup bottles or bring them from the fridge in a little wire carrier with the food you’re serving. I did find the sugar pouring containers to be a bit irritating as they leaked and didn’t actually dispense the barbecue sauce very well.The sides I found very traditional and liked them. I had the butter beans which I found very good. My friend had the corn on the cob which looked like it had been sitting in the steamer tray for some time. The mixed greens were very good but our dishes had water in the bottom. Somebody is a baker and that is a very good thing as the biscuits were on point and the coconut cream pie tasted very traditional.As I looked around the restaurant I felt as though I were looking at people who were there perhaps for the first time and were probably saying to themselves I’m not coming back here again. I know you probably have people coming in there that are regulars and like the food just the way you are making it however those people are disappearing and or discovering other places serving more contemporary food. There is a contemporary way to do a barbecue restaurant and is actually quite trendy these days. If you made these adjustments and perhaps a few more I am sure you could be quite busy. You already have most everything you need to have going for you now. You have a great location a good kitchen and people working there who probably care but not focused on the right task. Short of sending Gordon Ramsay in there I am not sure what else to say and have probably said enough already. Good luck with your business and I do wish you well.
