Hand-pulled noodles. The unusual name of this tiny spot caught my eye as a I drove past. I went there with friends for dinner a few days later. The cuisine is that of Xi’an, and western China. The flatbreads are the size of English muffins, but firmer, more bagel-like in consistency. But the star of the place is the hand-pulled noodles, which you can see and hear being made in the kitchen. These are wide, long, and toothsome. There’s one noodle per portion, so a knife is needed. The most popular dish, spicy hand-pulled noodles, is made with oil, lots of garlic, and cayenne, but is way more than the sum of its parts. The menu is small, but includes more familiar Chinese menu items for the less adventurous, so there’s something for everyone. The place is simple, but bright and clean. Seating is limited, with plastic trays/utensils and no waiter service. Beverages are bottled sodas and tap water. There’s a busy takeout business at lunch.
