Brewsters is a consistently nice place to grab an above-par pizza and craft beer. Nothing fancy, but the Collie’s are always friendly and welcoming. I like what I cannot get elsewhere – whole wheat crust, fresh spinach topping, interesting beers that Bruce Collie brews himself. I really don’t get the previous bad review at all – I have never had anything but gracious friendly service at Brewsters. And we have been here many, many times. It’s a really fun place to go watch a big football game in the fall if you sit on the bar side. Maybe the previous poster caught this hardworking family on a rare bad day, but I value customer service and have always enjoyed being treated like my business matters when I patronize Brewsters.
Love the food.. We come to Brewster’s weekly, sometimes more, and love it every time. In response to some other complaints, not only are the Collie’s raising responsible kids, we love the fact the ingredients are fresh, home-made, not pre-packaged crap. The Omnivore is the best pizza. What ever you order, add spinach on top – it’s awesome. They are NOT over priced, and beer and pizza is very affordable. Sometimes on busy nights there is a wait, so call your order ahead, and always try the beer. Only once, I got a pizza that was crispy and toasty, but that was a rare exception over the last 2 years of weekly pizzas. And hooray to the Collie’s for raising their family right. I’ll take a pizza any day made by a Collie over any other dinner choice. In fact, I prefer Brewster’s over closer options like Gruene, New Braunfels or San Marcos. We regularly drive 15+ miles to get our weekly fix. Learn to slow down a little, this is Wimberley.
REAL pizza, excellent. And very hard to find in Texas. Had the classic crust with red sauce. Best I’ve had in years. Beer good too, brewed onsite with 8 selections from light to dark. The bartender will let you sample several to find your favorite. If you don’t like this pizza you don’t understand what good pizza is about.
Top notch pizza, worth the drive. Brewster’s was recommended by an acquaintance, so drove out to the junction of RR12 and FM32 between San Marcos and Wimberley to give it a try.Had a large side salad w/ the house lemon oil dressing. It was okay (lettuce & cherry tomatoes only), the dressing was one you don’t find many places and therefore unique, but the rest of the meal was fantastic.Got a half Mediterranean/half Margherita on wheat crust. The wheat added a different and flavorful dimension to the crust, and was enhanced by an Italian rub of traditional Italian spices (oregano, basil, etc). The pizza was delicious. Brewster’s thin crust allows the flavors of the ingredients to be showcased (instead of a thicker crust dominating the ingredients, or a thicker crust serving mainly as ‘filler’ and detracting from the pizza itself).I haven’t historically been a fan of thin crust, but the way Brewster’s and other pizzerias do it, I am becoming a thin crust lover. We had a great dinner, including an enjoyable conversation with the owner who is personable and committed to producing high quality offerings.Brewster’s is worth the drive to check out. Will definitely come back when in the San Marcos and/or Wimberley area.
Great Family ran Place. What a jewel in the hill country….13 kids, 2 super bowl rings, homemade brew that we actually loved, and tasty pizza.
