Owned and operated by husband/wife duo Leigh and Amanda McDivitt, ONE6EIGHT is a welcome addition to Balmain's restaurant rich Darling Street. Leigh heads up the kitchen while Amanda runs front of house - and boy is it a winning combo. Leigh has always had a passion for seasonal cooking and for ensuring his produce is sustainable. He even has his own kitchen garden which is perched on the restaurant's roof. Everything is done in house, right down to the house made Glenfiddich bread and hay-smoked butter. Amanda even infuses special syrups which feature in some of the custom cocktails shaken up in the bar. ONE6EIGHT is a family.
