This hotel has had a menu inspired by Colin Fassnidge. Based on that we ordered the Roast Pork Belly ($54 for two). The Colcannon (Irish mashed potato) was very nice and creamy and the spices on the roast vegetables were nice. The pork was mainly juicy however the crackling was non-existent. The service left something to be desired as it took over 45 minutes to receive our main and while the pork was nice it was disappointing to receive without crackling and burnt pumpkin. Overall, nice but not great.
