This is not an Italian restaurant as you may know it - Antica Australis is a Ciociarian 'locanda'. A locanda is a local, casual dining establishment accessible and enjoyed by everyone. It's a very traditional regional Italian concept of an inn, designed to provide meals for travellers looking to rest and restore. Paolo's home region of Ciociaria is a 'hidden' food and wine region within Lazio in central Italy, and was once the favoured foodie destination of ancient Roman emperors. This is the authentic taste of an Italian village on top of a mountain, without having to go all the way to Italy. Instead you get to pause, rest and revive your spirits in one of Australias most gorgeous and perfectly preserved 19th century villages Carcoar on the Belubula River.
