Fluffy, airy goodness! Airlab definitely lives up to it’s name. The souffle pancakes are indeed airy and the egg smell isn’t too strong. I ordered their popular creme brulee flavoured pancake with a side of thai milk tea ice cream. The ice cream and the souffle is a perfect combination. It is on the pricier side $8.80 or so for one but quite worth it.
While service was friendly, the mixed ice cream of milk tea, vanilla, oreo and pearls was a miss. It was way too sweet and melted quickly. Ice cream itself didn’t have any flavour too.
Soft and fluffy souffle pancakes.Air Lab is a small dessert restaurant located on the main strip of John Street, Cabramatta. They specialise in souffle pancakes but also serve classic pancakes, cupcakes (different to your humble cupcake), and a variety of drinks. There is a viewing window at the front to see how the pancakes are cooked. Seating inside is very limited and not ideal for groups or parents with prams. Look out for the yellow sign and queue as wait time for souffle pancakes is approximately 15 minutes.I did not know about this place until I saw the bright yellow sign and a queue out the door. I obviously had to try it, just to see what the fuss was all about.I only ordered the creme brulee souffle pancake as I had to be somewhere and the wait time was expected to be 15 minutes as it is cooked fresh while you wait.It was interesting to see how the pancakes were cooked but the wait felt like a long time and I was not use to waiting long for anything in Cabramatta as this suburb is known for it’s fast, fresh food service amongst other things. But the wait was worth it. It was recommended for the souffle pancakes be consumed within 5 minutes of receiving the order otherwise to put it in the fridge asap as it will effect the taste and the overall experience.We received x2 thick pieces of souffle pancakes stacked on top with a side of cream and a blue sweet. The top had a thin coating of burnt sugar which cracked when tested. The pancakes were light, airy, and had the right amount of sweetness. It was enjoyed by all.Verdict: If you have the patience, definitely worth a try. I want to try the Matcha souffle pancake on my next visit.
