Casoni makes beautiful pasta dish using seasonal produce & ingredients with a modern twist. The flavours & combination of ingredients used is clever & modern. Love the idea of their pasta of the week menu, you can always have something new every time you visit. Their Scarlet prawns linguine was to die for. The prawns were perfectly cooked, they were sweet & succulent with a springy texture. The flavour of the crayfish butter from the heads went so well with the sauce, it brought an extra dimension of taste to the dish. The Pipi linguine was full of sweet & plumped pipis with a rich buttery sauce. The adding of prosciutto gave an extra umami flavour to that seafood pasta. Only if they could reduce the saltiness in the sauce will be perfect.
