The dinner was a fixed 7 course meal, but won’t make guests over full. The dishes were creative so sometimes I don’t know how to enjoy and thanks for the guide from the nice staff. The foie gras with maple syrup was my favorite. The beef was juicy and I love it too. The desserts were dealt with very well. Only the price was the issue.
Best restaurant in Sydney… hands downEvery time Ive eaten there it has been perfection without the pretentious side of a lot of Sydneys degustationsFantastic whine pairings and intriguing selection of whisky on offer
Oscillate Wildly26th May 2017Each bite of food here is thought-provoking and skillfully executed. There were MANY amusing, intriguing and eye-openingly educational moments! There is the occasional bold, artistic stroke which lands (with scarily accurate judgement) right on the line of what could have easily become unacceptable, but doesn’t!The service staff is intimately familiar with all the food. Important guidance about how to eat certain dishes are given. Difficult questions about obscure ingredients and idiosyncrasies of some of the dishes are confidently answered without missing a beat.Sugarcane infused with G&T(…after sucking on the sugarcane for a few minutes, the flavour STILL keeps coming out…)Pork crackling(…biting on air…)Caesar salad in one bite(…the flavours of a whole Caesar salad develop perfectly within a single bite…)Sourdough bread with creamy and crunchy rendered pork fat(…the amazingly pork flavoured creamy fat is further accentuated by salty, crunchy, deep fried pork fat…)Avocado, finger lime and ponzu(…bold, contrasting salty, umami, sour and sweet with creamy avocado punctuated by bursting vesicles of finger lime…)Peas, lovage, apple, creme fraiche with Parmesan dressing(…beautiful sweet and creamy flavours but the choice of peas was a bit puzzling for this time of year – some of the peas were wonderfully tender and sweet, but maybe 1/3 of them were old and hard…)Foie gras, cauliflower puree, Job’s tears, maple syrup(…the individual elements were all tasty but perhaps the cauliflower puree and the maple syrup could have been served in separate containers as dips. On the same plate as the foie gras, it was very easy for the foie gras to become overwhelmed by those other strong flavours…)Shiitake mushroom, enoki mushroom, cuttlefish, roasted buckwheat in consomme of shiitake mushroom and black garlic(…intensely rich flavours made fascinatingly complex by the smokey, charred, chewiness of the roasted buckwheat…)Fish (NZ flounder) and chips(…delicate, paper thin, crispy potato skin strips with pan-fried NZ flounder, excitingly just on the line of being over-salted – unmistakably reminiscent of the sea…)Teriyaki wagyu beef with fine shreds of matsutake mushroom(…so tasty…)Vanilla ice cream and chestnuts(…fragrant and intense vanilla…)Coconut sorbet, licorice spongecake and malt(…cleanly separate, individually strong flavours but which all complement each other well…)
We had diner at Oscillate Wildly to celebrate our anniversary. It’s a small restaurant and popular so it’s recommended to book a table well in advance. Each dish is just simply beautiful with a full of surprise. It’s pretty to look at each meal and delicious to eat it. Inspiring, fresh, new, innovative and wow! It’s a little secret hidden restaurant where makes you smile…I want to go back again in a few months time!
Amazing service and food! Would definitely recommend for a special occasion dinner, or if you just feel like treating yourself. Anyone with dietary requirements is well taken care of here- I’m severely allergic to shellfish and they came up with some amazing alternatives that were delicious!
Oscillate wildly really deserves all the credit. Each dish in the 8 course degustation was both unique and surprising in flavour. Usually in a degustation there will be one dish that’s not your palette, but honestly I loved each and every dish! Each course offered a diversity of textures and even temperatures (the Hot N cold duck foie Gras shavings) that brought out the wonderful flavours of each ingredient, even taking advantage of the fresh ingredients in season. Absolutely enjoyed the dining experience here and would highly recommend it for someone who has more of a delicate palate and enjoys lighter but vibrant and fresh flavors.
