I tried Momofuku Seibo at The Star earlier tonight and I have concluded that the Chef Paul Carmichael is a bloody genius! He has managed to combine the taste and textures of the Caribbean with some of Australias best ingredients.I had Mofongo (plantain, garlic, chicharrones), cou cou, green banana creole, Rundown (sea urchin, coconut, allspice), Ducana (sweet potato, currants, Caribbean XO) – my favourite dish of the night, Mango Curry – nice chilli burn, Crab, Ropa Vieja (wavy brisket, olive, pasteles), Dulce de Leche and Roselle, Pumpkin tart and a selection of cakes.Service friendly and slick and if you go you must go for the matching drinks – its a revelation.

For the portion and deliciousness of their food, the price is reasonable.We also received a surprise gift on our anniversary.Customer service is prompt and friendly. We were impressed and will come back again next time.

Too bad as I love sea urchin. Mango prawn salad was just way too weird, couldnt finish it at all. WIR? Maybe try their normal menu.
Hmmmm where to start… Momofuku Seibo has been on top of my go to places in Sydney but boy was I let down by the whole dining experience. Lets start off with finding the place. If youre not familiar with their fruit logo, then youll definitely walk pass the place. Maybe it was just me, but there was no sign indicating where it was. When we walked in, I could tell right off the bat that it wasnt youre typical fine dining restaurant. People were dressed very casually, loud music was playing and lets just say the atmosphere was extremely relaxing and casual. We got seated at the bar, which was a great experience watching all the chefs do their thing. We opted for the 10 course menu. Whilst we waited for our first dish, the wait staff placed a mortar and pestle in front of us, my initial thought, we were in for an interesting night. So first dish, plantain, garlic and chicharrones. To be completely honest, not sure what two of those three things means, but what we had to to is mash it all up, what tasted like pork skin and garlic, into a paste like texture and drink what tasted like a very smokey, aromatic pork broth. I liked the idea that it was hands on, but it was very anti climatic. I liked the broth/soup but the paste was a big letdown. Next we had corn, okra, sterling caviar. This was a lot better than the previous dish. I liked the subtle flavour of corn. It has a very baby food kind of texture when its all mixed together. Overall, nothing that special and memorable.I loved how the next dish was plated, they used dry bananas to place the little appetiser on top of it, which gave the plating a more unique look. I actually liked this one. I enjoyed the nice crunch of it. You could taste the paprika which was very pungent which gave it a peppery hit. If you love sea urchin, the next dish is for you. I, on the other hand, am not the biggest fan so Im a bit biased about this dish. I wouldnt say it was awful but like any sea urchin, it has the slimey texture with that sea like taste, will I ever be a fan of it? Nah, not really. My partner, loves sea urchin but he didnt like the combination of the coconut and the sea urchin, he didnt think it went well together. I thought the coconut overpowered the sea urchin taste, which I didnt mind. Im not the biggest chilli fan. So anything thats chilli, Im bound to dislike it. Next we had sweet potato, currants and Caribbean. I felt like I was eating hot oil. It was spicy and very gluggy. I didnt enjoy this one at all. Next was my least favourite dish of the night. When I saw it being plated in the kitchen, I was so excited because it looked delicious! Mind you, we didnt have a copy of the menu and I thought it was some sort of pasta dish. When the chef said it was mango and prawn salad, I was taken back. First bite, the mango was slightly bitter and had chilli powder on top. I know that green mango and chilli/salt is a thing in the asian culture but this, was on another level of weird. It was way too sickening. The prawn was non existent. There were small pieces on the dish but I couldnt taste it at all. I couldnt even finish it, I didnt enjoy it. Im not a huge fan of curry but the next dish caught me by surprise. I really enjoyed the crab, rice, curry. The flavours worked well together. The curry wasnt too overpowering. The crab was mixed nicely through the curry. I liked it but was it anything special, no not really. Also, for me thinking this was so far the best dish of the night so far (knowing I hate curry), says a lot. The next one was the wagyu brisket, olives and pasteles. A very chilli dish. I liked the wagyu brisket. It was packed with flavour and I loved the saltiness of the caviar. Unfortunately, it stops there. I wasnt quite sure what the orange thing next to it was but it had a very weird texture that I didnt enjoy. I thought it shouldnt have been on the plate. Yay! Another meat dish! 9+ wagyu short ribs, sounds like my kind of dish. The meat itself was delicious, melt in your mouth. I loved how perfectly they cooked it. Just enough red in the middle, seared on both sides. I love it! If I had to change something about this dish, it was be the sauce they used. I didnt like how it has a tomato flavour kind of taste to it, didnt do much to the wagyu. Our seafood course was the maroon and coconut bakes. Time to get our hands dirty, we both received a full size maroon each Before this course, they did show us the alive maroon that they would be cooking (flashback to the Simpsons episode of Homer and his lobster, Pinchy). The maroon was cooked beautiful. Strong flavours and very filling dipping the coconut bakes into the sauce. The coconuts were nice a fluffy, interesting choice of bread.Ahhh, dessert time!!!! Dulce de leche and roselle. I loved the snowy bits on the side and what seemed like cream. I thought it went well together but that drink on the side tasted a lot like wine and I dont drink so I didnt really enjoy that as much. Pumpkin, burnt coconut and seeds. To be frank, Im not the biggest fan of pumpkin in a dessert. I think its quite heavy and this was exactly that I imagined it to be. I couldnt eat the pumpkin part but whatever was on top of the pumpkin was delicious. Overall, a let down dessert that I couldnt finish.Last dish was the small cakes which included the following: rum cake, cassava pone and Guinness cake. The circle was freaking cold to eat! There was some sort of ice cream in the centre which was a quite a surprised when I popped it into my mouth. One of them tasted like Christmas pudding and the other one wasnt any spectacular. By then, we were ready to go home. We were stuffed, beyond stuffed however the chef gave us a complimentary chicken dish. I thought it was quite weird that they would give this dish to us right after we finished dessert, it didnt make sense to us??? We were already so full however we couldnt say no to a free dish. The chicken was cooked beautiful tho. It was tender and moist! I really enjoyed it. Now the next part was quite weird. We thought that was the end of our meal however the wait staff put another set of cutlery on our table. Another dish?? How could that be possible! At this stage, we just wanted to go home however we decided to wait a bit longer to see what was happening. After waiting 15 mins, we thought, okay we should ask someone what was happening. We asked one of the wait staff if that dish was our last dish, she said shell go ask someone. We waited for her to go ask someone and she came back, walked straight past us and continued serving other people, what the hell, we had to wait for her to walk past our direction again to stop her and ask her if shes asked anyone. She then says that she THINKS weve finished and shell get the bill for us… customer service = zero. Overall, the food was below average. Will I return, probably not. Will I recommend, no. I mean if you like strange weird flavour combinations then yeah be sure to check this place out ! Each to their own!
