Decided to try this place out after some online hype. Not the best but still relatively tasty. Tonkotsu broth was creamy and clean but there was just an overwhelming/dominating salty flavour profile. Noodles were a bit soft for my liking and forms clumps if not well mixed which is not ideal when eating noodles. Marinated soft boiled egg was great, and i love how they charred the chashu. More so than melty, it was textural and had a nice porky flavour. Service was friendly but SLOW. Maybe it was cos I was hungry but 20-25 mins for a bowl of ramen is questionable. Just personally because I didn’t like the dominating saltiness of the broth and slow service I probably would not be back.
So…lets get the pretentious thing out of the way, yes the chef is white and yes he can make ramen, very good ramen…Now the longer form, Hakata style ramen is not something we see around everywhere. I think the only ones that labels it is Ippudo and they kinda have this weird industrialist taste to it….idk? Just cant visage someone slaving over the broth to make sure its just perfect…thats what a chain brand does…side track***But here, its all on display and theres something that is quite special about the broth. You dont get that heavy feeling once u gulp it all down as you channel your inner Godzilla and let not even one noodle escape your gut…Surprisingly you feel good, warm and sated. I cant put my finger on it but she says its the care to remove most of the rendered pork fat in the soup. Ill take her word for it! Now we do have some criticisms, theres no noodle hardness option…but then again the place was buzzing so I guess its another layer of complexity that might just slow things down. Oh and the bar space? Bar space without snacks..? I mean we really cant have a proper drink without renkon chips or seaweed…maybe were just hard to please???Gotta say a lot of love gosh into this bowl and yes wed like to see what else comes from this spot in the future!
I was super excited at the prospect of a Sydney ramen establishment that makes their own noodles and rushed to come try it out after they opened, however the noodles were a little different from my expectations.The ramen is very Hakata style, tonkotsu with thin, straight noodles that have a unique soft, doughy texture. It does have some bite but it’s not what I would call al dente. Personally I’m not a big fan of these noodles, as they clump very easily and have a floury taste. This is made worse by the fact that they use tall bowls that taper very narrow at the bottom, meaning that the noodles at the bottom form into clumps very easily.The broth is decent, good amount of fat but still relatively clean and balanced. Tried the standard and spicy tonkotsu so far and both are okay. Broth is relatively light for tonkotsu but the noodles made it feel like a pretty heavy meal.Service was meh, not super friendly and slow water refills. Overall I’m unsure if this is simply the style they’re going for or that there’s issues to iron out after recently opening but has left me feeling a bit disappointed.
Bias review alertNow I love ramen, but I like my noodles to be the chewy egg ones. Here at Rara they serve handmade noodles which are more softer. If you don’t eat it quickly it may go soggy, clumpy and soft. asianfoodninja.com
The restaurant is very aesthetic and busy. The chashu pork I tasted was so tender and smoky, it was really well done. Too bad that I wasn’t a fan of the noodles. Broth was good, but it didn’t really feel very Japanese.
Yum the grilled pork was the best and definitely will come back for the black garlic broth. The line gets pretty busy from open till 7pm so get ready to wait
