Explored this just one month old new born baby at Spring Hill this morning. Being located near the junction of Leichhardt and Little Edward streets, this cafe is very eye catching. I appreciate its early trading hour and so as the passion from the serving team. Service is very friendly. I ordered the Pho (not many place willing to serve Pho in early morning) accompanied with a cup of Merlo flat white. Coffee is no doubt above average in terms of presentation and strength. Broth of the Pho is rich in flavour and the noodles are silky and competitive to those that I had in Melbourne. If not because the chef prepare the Pho with beef brisket rather than sliced beef (they said it is the Hanoi style Pho but I also have tasted the best Pho in Hanoi, where they serve sliced beef), this cafe will achieve full mark.Rating 4.5/5
