Did someone say vegan pancake? How’d they know I’m unable to pass them up. Minimo’s rendition are not too over the top, which is actually quite refreshing as they don’t leave me with a sugar/fat stomachache. Compote plus raw berries add freshness while the cashew butter adds a creamy decadence. (Looks like they’ve now swapped this for coconut yoghurt, which would have the same effect.)
