Tom is the best, his salmon is unlike anything you have ever eaten. He is seriously talented at smoking things – he once gave me a piece of smoked watermelon and it blew my socks of. This is the man who taught Frank Camorra to smoke a tomato ffs. Do yourself a favour.

Coming from Norway, we love and know our Salmon. The cold smoking technique used by Tom gives such a light, delicate flavour that I’ve never experienced. the gravlax is amazing also. We were in Melbourne only 6 days and came here 3 of them. Highly recommended!

I did not think I liked smoked salmon much until I tried the offerings of Tom Cooper. The russian salad, smoked salmon and gravlax salmon were the best I have ever eaten. Loved the salmon on its own and also in the bagel. Bought plenty to take home and will never bother eating fresh salmon from anywhere else again!

Hands down the best smoked salmon I’ve ever had in my life, apparently using cold smoke is the way to go. I go once a week and its always great.

Legend Tom Cooper .. Greatest housemade smoked salmon and gravlax (cured not smoked) available for purchase by weight and freshly sliced. Otherwise have a bagel or sourdough croissant dine in at the tiny bar seats (with the pleasure of a side glass of wine including Billecart champagne if you like served in riedel stemless) or takeaway if you must. Be prepared to be patient, it’s a one man show & operation. Enjoy the Canadian cheekiness and some perfect fish for your trouble.
