My partner and I stopped here for a pre drink before dinner last night.

The restaurant was busy with people both downstairs and upstairs, upstairs was more of a casual setting with arm chairs and coffee tables. The decor was beautiful and our waitress lovely.

We ordered a white and red wine both very nice. Having a look around the cocktails and food looked great, I was eyeing off a table next to us lol the food looked delicious

There was a back room which you could book for private functions, all in all a nice place to visit.

I really hope this bar makes it, it does have what it takes. Lovely new owners, lots of space, its over three levels and a good cocktail list. I was invited to the launch, it was fabulous to see locals there as well. Will definitely visit again to update my review.

We were invited to Noble experiment for their new menu launch last night and it was a lot more disappointing than my first visit. Some of their new canaps/bar food we tried were spring rolls, arancini balls and bruschetta. Nothing revolutionary although I did enjoy the bruschetta.

The service on the night left a lot to be desired and the cocktails lacked the wow factor I had experienced when I visited 18 months ago. Its unfortunate as I was super impressed with the venue the first time I visited

Had to come here and have me a bathtub cocktail. It’s pretty much the cutest thing I’ve seen since Ryan Gosling in The Notebook. $22 of gin, lillet rose and citrus- quirky and delicious. The design is reminiscent of a super sophisticated speakeasy and the atmosphere warm and inviting.

In true smith st style it’s unpretentious and a little bit obscure. Absolutely loved my experience and the magical bartenders. Inventive, progressive, exciting; their creativity has no bounds.

You walk into this venue and its 1920s themed. Great ambience and fit in with the culture of Collingwood. Got a little comfortable on the couches to then realise there was a downstairs with live music and gin bar. Tried a few canapes which were quite good and a unique mix of cocktails and drinks! Good luck on the relaunch

I was fortunate enough to be invited to the relaunch of the Noble Experiment tonight. This is a casual bar on Smith Street serving some great cocktails. The reason for the relaunch was that this place has some new management who want to make this bar accessible to everyone.

This is a big bar over 3 levels. There is the street level, then the upstairs bar w some great big single and double chairs. Very comfy and private. Think dark wood, heavy furniture, very old school.

Then there is the downstairs bar, which has live music, and some amazing cocktails!

The bar food is amazing, there are some really tasty hot nibbles and finger food. What fun!

We called into Noble Experiment tonight for their launch event. Three levels of 1920s styled interior from dark and moodie upstairs to the lively music playing downstairs there was certainly
A heap of potential locations to grab a drink.

Cocktails were reduced tonight and we got to try out the new Tanqueray Rangpur Gin in a gimlet form and were nice and citrusy. The bartender got his quantities wrong so we ended up with one much smaller than the other… still tasty mind… and I guess as long he didnt cheat us out of alcohol right!I really enjoyed this new Gin… might even buy some for myself.

We got to sample a small selection on their menu via roaming tasting platters with arancini, vegetarian spring rolls and mini bruschetta. I especially liked the chorizo arancini which were still nice and hot.

We also got to try a sample of a new sour beer with a Japanese citrus twist. It was quite an easy drinking beer.

We had been invited in so hadnt anticipated paying for food and drinks and so were a little taken aback when asked to pay for drinks and order and pay from the menu. Both ourselves and our dining buddies had left other fully catered events early to attend this one. we were looking forward to a great range of menu items to try but sadly the range wasnt on offer. Perhaps another time.

In saying all of that I did enjoy the items we did sample and staff were friendly and attentive.

Gorgeous and romantic bar with fun cocktails and lovely creative food. I wanted to try everything on the menu and we ending up ordering quite a few dishes but the stand outs were the desserts. Great for a date!
