I was curious to try the Texas brisket ramen but unfortunately I didn’t like it. The brisket was quite soft but it was very peppery, which made the smoked broth peppery and it tasted strange to me. Additionally, the noodles seemed like cheap instant noodles rather than the tasty ramen I was hoping for.The service was very professional, as expected in such a nice hotel, and the ambiance of the restaurant was elegant and comfortable.
The popup is set inside Collins Kitchen of the Grand Hyatt.As such, the service is professional, albeit a little awkward at times.Texas Brisket Ramen $24 – the noodles are commercial and have that wave-like instant noodle feel. The broth is thin, more similar to a shoyu than anything else. The brisket is cut thick and is supposed to be soft and tender but difficult to manage as a huge wad of meat. It’s good separately as American BBQ, but not sure if it works in ramen. Tonkotsu $16 – has more body and richness to the broth, maybe with a little miso to round it out. If I had to choose out of the two, I’d go for the tonkotsu and save yourself $8.Interesting concept, but I’d probably go to a dedicated ramen shop.

2.5 / 5Quite excited for our first Pop-up , Texakaya has all created a name for itself in the business and some we know really vouch for the Ramen they serve.After having us seated, and giving a brief about the whole we were ready to call for a Crispy Chicken Karage and Texas Brisket and Carolina Style Tonkotsu. For desserts we had to try Mochi of the Day : StrawberryButter Milk Chicken Karage were the best we have eaten so far, and can be easily called the dish of the day. Perfectly crispy from the outside, creamy and juicy from the inside. Omg!! We can still recollect the texture.Strawberry Mochi definitely gets the dessert of the day tag for being just perfect sweet, soft and chewy.But, the biggest disappointment of the evenings were the Ramen Bowls. Flavorless!! Even the perfectly cooked Brisket (cooked between rare and medium) and perfectly crispy Pork Belly could not save them. Broth was dull, flavorless. Bare minimum seasoning that couldn’t be tasted or cherished made it taste awful. Only after adding the sauce(which they are known for) were we able to finish them.Hospitality: top-notch,Food Presentation: Top-Notch,Ambience : Lacklustre and Dull. Just like a lobby cafe in any of the 5⭐. By adding two Cow Statues does not enhance the ambience. Option for vegans and vegetarians is quite limited.Value For Money: Nopes, Not really.
Friends suggested we visit this pop up restaurant that is Texas and Japanese Fusion. We booked in for Wednesday Dinner and it was a lovely experience. There were 7 of us so we decided to do the feed me menu. It was $59 each the best part is the chef is very flexible. A few of us have the preferable main dish in mind which happened not to be the one on, chef was nice enough to swap to the dish we wanted as long as we all agreed on the same dish. Entree we had Karaage Chicken, Schnitzel sandwich (our fault to swap to Karaage chicken then everything is fried chicken), a couple skewers. Main we had the pork baby back ribs, they came with corn and a Japanese salad. Dessert is a mix of 4 dishes, all beautifully done.The only complain is the drink menu is quite limited well not as good as some other fusion restaurants. Service was really friendly. Worth giving it a shot!
