Busy. Buzzing. But be patient. And patient we were. Having to wait 30-45 minutes between certain courses. Staggered and will be out when theyre ready was the waiters reply. It is clear the kitchen has not yet worked out how to deal with a moderate capacity restaurant. Yet service, when it arrived was polite, pleasant and knowledgeable. A friendly smile. Well curated wine list even if the markup is the industry standard. My tip is the Flowstone Cabernet from Margaret River, probably the best value red if you can spring for a bottle. Or perhaps a selection of Gage Road beers?Food was tastefully but heavily seasoned. Potatoes spiked with rosemary crisp and moorish. And helped fill our appetite after the long waits. Pork belly soft, juicy and melt in the mouth. Crackle salty but far from crisp. Spatchcock, undercooked in places. The meat is not supposed to be red nor bloody at the bone. This place has potential. But at $65 per person for a night out, it has some way to go.
