Originally built in the 1850’s for the first Anglican Bishop of Perth, it has been the home for the family of Lord McAlpine and is now situated in one of the few privately owned and managed heritage listed gardens in the city. Executive Chef Nathan Le has been managing our kitchens for over a decade, and imparts a unique interpretation on fashionable food, including a delightful marriage between fresh and local ingredients, combining traditional cooking methods with new techniques, while always staying true to the idea of simple flavor combinations. “Perth, being isolated from other cities, brings its own challenges. But it’s these challenges that make the food in Perth fresh – taking world flavours and using local ingredients from Wagyu beef to amazing seafood and truffles.
