Chef Jeferson’ Robalo Siciliano is a magnificent dish of grilled fish fillet with a seeded Dijon sauce, served with a local pumpkin purée called cabotiá and grilled bananas that have been dusted in corn meal. An exceptional combination of flavors and textures.
