We got the 6 course chef tasting meal and it was fantastic. They did a really good job of balancing out the strong flavours within each meal and also did a very good job of orchestrating the flavour profiles in each meal so that there was a really nice flow to the dinner.The vegetables (especially the asparagus) were cooked absolutely perfect and had really good flavour and texture. We were told that the asparagus came from the garden and I wouldn’t be surprised if it did. It was probably the best tasting asparagus I’ve ever eaten and they didn’t really do anything for seasoning. They were just really really good.The servers were all very knowledgeable and did a very good job of making sure I didn’t get sick. I did have to get the cheese dish sent back because there were oats on it (not worried about it because most celiacs are fine with oats but I’m not one of them) and they remade the dish with no fuss.When we go back we probably won’t get the chef dinner again because it was a little pricey (totally worth trying it once) but it was really great getting to taste such a wide variety of the dishes they make.The absolute best thing we had was the fois grois parfaits(spelling?). It was so freaking delicious. We could have eaten tubs of it.

He also did an excellent job of attending us while still giving us personal time. We have the charcuterie which was great, and the pork hock soup, which my husband adored, and the tortellini with fennel sausage, which was one of the highlights of the night. We then had the wild boar and Alberta tenderloin for our mains, both of which were excellent. We finished with a dark chocolate terrine which was a lovely and not too sweet. The view is always beautiful and we look forward to returning this summer when we can eat outside near the garden! I especially recommend this restaurant for special or intimate occasions, as it is my personal favourite and where we chose to celebrate.
