This little noodle shop hidden at the end of Robson Street was a delightful find. Its hard to find Taiwanese beef noodle soup that taste as authentic as this place in Vancouver. The only criticism I have is that I wish the beef was in bigger chunks, rather than thin slices because it is just so tender that it almost melts and disintegrates into the soup noodle itself. Not that I found drinking all of the broth a hassle because it was very flavourful.Mmmm… the broth. When my soup noodle came, I had ordered it at medium strength spiciness. The chilli oil was on one side of the bowl, while the clear broth was still available for me to try on its own, and it was heavenly. It was so rich in flavour, you could tell no steps were skipped to prepare the broth. You could taste the sweetness of the marrows and the salt levels were just right. I was given soy sauce and extra chilli oil to adjust to my liking, but I didnt feel the need. I will definitely return for more beef noodle soup.
