Some chives on the side. I’m on a quest to learn as much as I can about Chinese cuisine — aside from the Westernized stuff I grew up eating. So while I was killing time waiting for another dish to be prepared by one of the stalls at this small food court above the T&T Market, I noticed that Chef Cong Cong had chive pancakes for $2.95. I had just enough cash in my pocket to afford that, and I’ve been wanting to try the pancakes, because I know they’re such a standard Chinese dish.The woman running the joint fried ’em up fresh for me. They were nicely oily outside the wonton skin, but not so greasy that they squirted or oozed when I cut into them. The chive and scallion filling was fresh-tasting, green and tender. These things were the size of small Argentine empanadas — not a huge bargain at roughly $1.50 apiece — but I consider them quality made. I reckon it was a good place to taste my first chive pancake. Now on to eating the beef variant somewhere!
