The pizzeria is tucked away in the corner of a strip mall in Millstream Village of North Langford. The inside is open and airy like a Naples bistro with modern rustic touches. Clean and classic. An oasis in concrete suburbia. The 900 degree oak-wood fire oven, handmade in Naples by a master oven maker using bricks and lava sand from Mt. Vesuvius, is appropriately named Victoria and proudly front and center in the open kitchen. Most of the pizzas on the menu are traditional with some signature creations and seasonal specials. Ordered two pizzas: the Funghi with cremini mushrooms and fresh garlic and thyme, and the Aloha with ham, freshly cut pineapple and added bacon. One delicate bite and we were both like Mamma Mia… The crust was cooked hot and fast to that 90 second sweet spot: soft, porous and chewy with right amount of elastic pull n’ bite, and a flame-licked edge, not too charred, with a tender-thin underside. Perfecto. The San Marzano tomatoes shine in the sauce as they should: fresh, light and bright, and perfectly tangy sweet – one of the best balanced sauces I’ve ever tasted. Let’s just say the pizza was so good I ate the whole dang thing in one sitting! The tableside chili oil is a nice touch. Overall we were very impressed with the care, attention and quality of our pizzas. Even better than Prima Strada. Only open from Noon-8pm and closed Sundays. The place is popular and can get very busy, including take out orders, so patience is key. Prices are bit high especially for add-ons (it was extra $4.50 for bacon). You can’t substitute out ingredients either so extras add up if customizing own pizza. It was about $40 for two pizzas. The traditional Neapolitan thin crust is all about star-quality ingredients, organic and sourced locally if possible, and prices will reflect that and are comparable to Prima or Famoso. The name of the game is simple and fresh. And 900 Degrees is just that. Quality and authentic. The owner, Adrian, was doing his rounds going table to table checking on guests and their food experience; someone who obviously cares, offering a friendly handshake and a smile. Also helping out in kitchen, overseeing quality of pizzas and artfully assembling appetizers and charcuterie salumi platters. Molto Italiano. I can see why 900 Degrees is critically acclaimed by EAT Magazine and won CTV’s best thin crust pizza award for all of Victoria (the thick crust award deservingly goes to Oregano’s). Langford is lucky to have this buono deliciousness.
