We are excited to be the first restaurant to bring gourmet pizzas to beautiful downtown Orillia. Neapolitan pizza has unique attributes that set it apart from the mainstream. Ours are a thin crust, made fresh daily with the finer double-O flour, which results in a lighter, airier crust. Traditionally the sauce is simply crushed tomatoes, although we add a few more goodies to ours. All pies are topped with fresh mozzarella and only the freshest local ingredients. The completed pies are baked in our state of the art Moretti pizza oven that runs at, you guessed it, 800 degrees and cooks for about four minutes. Coming hot from the ovens, the crust is characteristically soft and chewy, and with a little bit of char from the intense heat.
