The Wicked Pickle test kitchen, housed in a vintage 1966 Airstream Globetrotter trailer, is the work of several men who dreamed of cooking on the boundless, open road. Restoration and conversion work on the gutted shell began in Austin, Texas before finishing touches were put on it with great care by mechanic, Kelly Chancey, in Atlanta, Georgia. Current owner, Derek Barnes, brought it to Stratford, Ontario in the Spring of 2013 and - along with pirate-hearted flavour dj, Andrew Mavor - sold the first dish out of its service window at the local culinary festival that Fall. Derek has no professional kitchen training and no culinary pedigree. He draws his inspiration from street food and home cooking from around the world - food that he encounters on his travels and in his studies. He is joined in the Wicked Pickle kitchen by a rotating roster of social misfits and miscreants that, on their better days, fill the hard working restaurant kitchens of the Stratford area. Our work is made possible by a partnership with Stratford's Local Community Food Centre which provides a home for the Pickle when it's not on the road and a commercially certified kitchen in which much of our prep work is done. In return, 10% of the gross revenue made at all Wicked Pickle events are committed to the LCFC in support of the great work they do for food security and education in our area. It is our hope that the Wicked Pickle will stand for future generations as a shiny, aluminum beacon for anyone who's ever wanted to travel the world, but couldn't bear to leave their kitchen behind.
