For ten thousand years the Aymaras and Quechuas, Andean cultures, have been present in the province of Tarapaca and have made this territory a natural route joining the high plains with the shores of the Pacific Ocean. From East to West the scenery is marked with peaks, lakes, salt flats, geysers, thermal fields, queuas, yaretas, cactus, ichus, condors, huemules, guanaco, vicuas, vizcachas, springs, canyons, coastal plains and an ocean abundant in fish and shellfish.The ancient Andean inhabitants marked their trails with apachetas (stone pyramids), tambos (resting sites), pucars (fortresses), utas (houses), marcas (villages), terraced crops and their expression of rupestrian art, rock art and geoglyphs; the most famous being the Gigante de Tarapac (Giant of Tarapaca) (19 56 56.79 S 69 38 01.08 W) The Ruta del Gigante (Giants Route) restaurant is an echo of the Andean world offering a variety of products from different altitudes generating flavors, textures, fragrances, hues and beauty of a unique cuisine identified with Mother Earth (Pacha Mama).A return to the original cuisine is recreated, based on natural products harvested from the sea and mountain ranges, seasoned with fragrant herbs, obtaining a world of sensations, incredible balsamic flavors and pleasant shades.
