Born in the highlands of Mt Cotopaxi, the Terra project, the brainchild of its chef, Alvaro Reinoso, the emerging star of Ecuadorian cuisine, is to combine traditional Ecuadorian foods in new, challenging and delicious arrangements equal to anything produced anywhere in the world.
