Shibumi is a pioneer in Ecuadorian dining that introduces local and seasonal ingredients found nowhere else in the world, while reinventing the most classic forms of Japanese cuisine. The menu changes daily based on the market's finds, and the beer selection rotates weekly to highlight our latest discoveries. We base our experiments on the most demanding foundation of technique, quality, and simplicity, using Japanese traditions as a primary point of reference.
