This chic and laid-back restaurant is located inside the Spinaker Hotel in Grau de Roi-Port Camargue, not far from Nimes. The hotel has a light and breezy 'summer holiday' vibe with sun decks and a swimming pool, and Le Carres des Gourmet has a candlelit terrace perfect for al fresco dining on warm evenings. The Mediterranean menu, created by Head Chef Jean Pierre Cazals, is fresh and seasonal and signature dishes include the smoked salmon served with horseradish and salad; the beef carpaccio with truffle oil, lemon juice, sweet herbs and hazelnuts; and the rabbit casserole cooked with almonds, broad beans and salad. Le Carres des Gourmet also has an excellent French wine list.
