Frédéric went through the famous restaurant La Tour d'Argent in 1985. After more than twenty years working in different Parisian hotels (Sheraton, Concorde Lafayette, Hotel de Castiglione, Ruc Univers, Hotel Crillon), as well as in the National Assembly, he took the direction of Toulouse where he bought the Bouchon Lyonnais in 2017. Although he renamed it Nelly and Frederic Phone, he remained faithful to the local cuisine that made the reputation of the place.
