Claude POTHIN is rigorous and precise in his selection and search for savours, and will surprise you in his choices: Papaya from Petite-le, pigeon from Les Avirons, foie gras from La Plaine des Palmistes, herbs from the vegetable gardens at PALM Hotel & Spa, organic prawns from Mozambique, coconut cabbage from Saint-Philippe...
