Ethiopian meals are typically served on a large platter around which guests and family gather. If there are many diners, multiple plates are used. The platter is lined with large pieces of a flat, pancake like bread called Injera. Injera is the Ethiopian Staple bread. Piles of various food items are placed around the platter with rolled up pieces of injera. Ethiopians do not use eating utensils. Pieces of the injera are torn off with the fingers of the right hand and used to scoop up and slightly compact the food. Ethiopian people share from the same plate which helps build the bonds of friendship and loyalty. Those bonds are often demonstrated in the form of Gursha, placing food in the mouth of another diner. Ethiopian dishes are characterized by the variety of spices used in their preparation.
