Popular local family food and some dishes from north of italy ,Veneto.It is run by the Candido family, originally transferred in the Pontina area to redeem land from the swuamps and malaria.The project went under the name of "bonifica pontina" many new towns were built from nothing such as Littoria,now named Latina, Sabaudia and many others.The historical event wanted and accomplished by the the Mussolini regime. Needless to say the bonifica made Mussolini very popular especially among people who moved in the Pontina from the the north of Italy,Veneto,Emilia Romagna.
