NOVE was born from the encounter of chef Giorgio Servetto and Villa della Pergola. NOVE wants to put at first place the quality of raw materials, researching authentic local products and giving complete importance to seasons. Chef Giorgio Servetto's cuisine wants to narrate his story, made of flavour and taste which tell about his childhood, strictly connen- cted with traditional ligurian cooking, influenced by Piemonte and France, reviewd into a modern tone. To intensify the genuineness of the cooking, the executive chef and his brigade take from 'I Giardini di Villa della Pergola' citrus, aromatic herbs and edible flowers. Three tasting menu, one of them entirely vegetarian and la carte menu, will take NOVE's guest to a travel between the sea and country of Liguria, passing through France, to continue towards Piemonte.
