We try to be atypical offering dishes of our traditions (where others offer dishes reinterpreted).. Absolutely we do not nouvelle cuisine ...Culinary roots are for us a way to make people understand how important traditions are in our kitchen...Just for example..A ragu' sauce should be cooked for 6 hours... No less.. .-)
