In Via San Tommaso, a pleasant little lane, next door to what was the first Turinese emporium of Luigi Lavazza, Iva and Maurizio Tassinari's I Sapori has been a fresh pasta institution for over 30 years. Their agnolotti Cavour are among the finest in town and in their workshop behind the display counter, you'll see them making plin langaroli, pastas with unusual fillings such as ricotta and citrus fruit, saffron and spinach, goat's cheese and Tropea onions, and classic tajarin, as well as their "brothers" from other regions, from cavatelli to orecchiette, from pici to busciati trapanesi. The store also doubles as a delicatessen with dishes such as baked salmon, eggplant parmigiana, Andean salad with quinoa, fried fish, and Russian salad with steamed vegetables, available also in a vegan version. Many other dishes are aimed at vegetarians and vegans-seitan escalopes, for example-and special lessons for them are organized inside the shop.
