"Manteniamo una costante attenzione al territorio, alla stagionalit e alla ricerca della materia prima che utilizziamo nei nostri piatti. Il contatto con l'agricoltore, l'allevatore, e i nostri selezionatori di fiducia, fa si che in questi anni ( fra poco il ristorante compir 40 anni) la qualit della proposta sia sempre alta, scegliendo la semplicit e la naturalezza dei gusti e dei profumi, piuttosto che elaborazioni sofisticate. Nostro padre ci costantemente a fianco, ricordandoci ogni giorno che le esperienze, le persone, le relazioni, sono alla base del nostro lavoro, e che solo grazie a quelle riusciamo ad avere nella nostra cucina prodotti di eccellenza."Details
