La Prova del NOVE Restaurant is administered by the homonymous Foundation directly connected to Aurelio Saffi Institute in Florence, with the crucial cooperation of Hotel Firenze Number Nine.Aurelio Saffi is one of the oldest Vocational School for Tourism and Catering Services in Italy and it was the first one to be established in Tuscany.Master chefs, head cooks, chefs de partie, pastry chefs, waiters - offering you an unforgettable dining experience - used to be "Saffi" students and are now attending a one-year Master of Culinary Arts or Hospitality Management to refine their skills.In the meantime, they supervise our young students, directly involved in an internship which represents a professional experience of the highest level.La Prova del NOVE is intended to be a learning lab and - just like a school - it expects no profit. It aims to form highly skilled professionals who will soon successfully join the labour market in the field of Catering and Hotel Services. They will also contribute to revitalise the Italian Art of Hospitality and carry on our national and Tuscan Culinary Tradition adding a smart touch of novelty to ancient recipes.
