Sgabeo is an Italian food typical of Lunigiana, a mountainous historical territory of Italy, dissected by the Magra river, covering an area which runs from the Apennines to the Tirrenean Sea, now falling on the borders between Liguria and Tuscany within the provinces of La Spezia and Massa Carrara with principal towns including: Aulla, Bagnone, Fivizzano, Fosdinovo, Podenzana, Pontremoli, Sarzana. Sgabeo is leavened bread dough, cut into strips, freshly fried, salted on the surface and remains light with no oil absorbed. Traditionally eaten either plain, or stuffed with ham, mozzarella, bacon and cheese...
