EVO, the renovated restaurant of AQUALUX Hotel SPA Suite&Terme Bardolino, open to external customers as well, starts up the summer season with its usual wide array of unmissable flavours and inspirations. Stepping inside EVO Bardolino means much more than walking into a restaurant: it means living a whole experience in taste, tradition and creativity; it means getting to know a gourmet world immersed in a stylish and welcoming ambience, while being discreetly spoiled by the matre and guided by the sunny disposition of the young Chef Simone Gottardello, who has treasured his important experience with Chef Giancarlo Perbellini. All the recipes that can be savoured at EVO are distinguished by the utmost respect to tradition, the bounty of the earth and the excellent quality of the ingredients, all selected by the Chef according to rigorous standards and then cooked to value their flavours and aromas, the cycle of the season and the best combinations, in order to create an harmonious match where each flavour is enhanced. The recipes are created with care and based on few main seasonal ingredients, set off by local specialties, produce which only this generous land can offer, such as the Vialone Nano rice, at its best combined with smoked lavaret, lake fish egg mayonnaise and garden rampions, or the black truffle of Monte Baldo and the snails; or again local vegetables such as red radicchio, white asparagus and celery from Verona, which combined with coffee powder can set off the flavour of veal cheek braised in Lessinia honey-aged beer. Also, all the ingredients are mainly organic and selected from local producers. The tasty menu, regularly updated, offers a wide choice, matching the principles of healthy eating. The Mediterranean culture perfectly combines with a creative and contemporary flair, pleasing with simplicity and naturalness, following Gottardello's style in surprising the guests with pasta and rice dishes as well as meat and fish recipes, both from the sea and the lake. The recipes are creatively presented, with the utmost attention to detail, even the smallest ones, satisfying the eye and anticipating the tasting with curiosity. The recipes are further enhanced by the pairing with wines from local vines, such as Soave, Valpolicella, Amarone and Bardolino, as well as with the fine EVO Viola Oil, a precious cooking base for the delicious salt cod with milk cream, anchovies, capers and puffed polenta: this special oil takes advantage from the sweet, intoxicating Ora, the pleasant breeze of the Garda, and it is also used to cook incredible desserts. The intimate atmosphere offered by EVO Bardolino, which can also boast a summer terrace overlooking the luxuriant park of the inner patio, is perfect for a romantic dinner, a lunch with friends or exclusive events.
