Passing by the side of a striped clay wall, you push open the door of Kokyu and you are greeted by the sight of the main dining rooms thick Japanese cypress pillars and natural stone floor. Aside from the main dining room, Kokyu features a tea ceremony room and three separate rooms. Enjoy your meal undisturbed by others as you immerse yourself in traditional Japanese culture. Kokyu is famous as a restaurant that Zyuwari-Soba(soba made only with buckwheat flourand natural water by skilled craftsmen),and Kaiseki-Ryori(tea ceremony cuisine) using seasonal high-quality ingredients. The reason our soba noodles are so fragrant and delicious is that they are made from fresh buckwheat seeds, milled in our own facility on a nearby site.Buckwheat seeds supplied by a contracted farm are kept in our low-temperature storeroom. Each morning ,we thresh and mill seeds that only the amount needed for one day, to produce our fragrant soba noodles.
