Ichiv was established in 1991 in Turin, Northern Italy, and is an institution that trains foreign professional cooks with the aim of ensuring that authentic Italian cuisine culture is properly propagated overseas. After completing the training in Ichifu, the chef has chosen three Italian restaurants, Da o Vittorio, Vecchia Lanterna and Antica Osteria del Bai, for further training. Northern Italy at the base of the Italian peninsula is close to the Alps, and the latitudes (approximately 45 ) of Milan and Genoa, typical cities of northern Italy, correspond to those in Wakkanai, Hokkaido. However, because of the Mediterranean climate, winter temperatures are not as strict as Wakkanai. Still, nights and winters are cold, and dishes with plenty of butter and cheese are preferred. Enjoy the elegant Northern Italian cuisine with the chef's special skills in an elegant setting.
