After apprenticing to established Kyoto cuisine restaurant in Tokyo, Hirotaka Koiwa opened his own restaurant in prestigious Ginza area in June, 2014. Known for its aged sashimi, Kuroge-wagyu beef tongue or aged games in season, many connoisseurs of food and journalists inside and outside Japan visited regularly.
