The first of its kind in Japan, re:Dine GINZA is a fine-dining restaurant that offers a co-working space for professional chefs. Five chefs work at re:Dine Ginza, each serving their own style of cooking. The line-up changes every few months, so there is always a variety of cuisine on offer. The current offerings are high-end ramen, tea and karaage chicken, Hombino clams, charcuterie, and fancy salad from Smart Salad Factory. Guests can order dishes from any of the five chefs, so there is bound to be something to suit everyone's palate. The idea of the shared kitchen model is to act as a business incubator, allowing chefs to try out innovative ideas in a real restaurant setting before establishing their own restaurant independently. After the meal, diners vote for their favorites, which provides feedback and influences the change in chef lineup.
