I was pre ordering bouchees for the next morning as I wanted to take them out of town. I didn’t mind having them prepared ahead of time for me to come pick them up the next morning. But the owner and the chef insisted to prepare them fresh early in the morning, although they had to start earlier than usual. I am impressed! We especially like the zaatar fingers.
