We serve Iberico Pork, bred in the region covered by the Dehesa micro climate, is a traditional breed of domestic pig that is native to the Iberian Peninsula (near the border of Portugal & Spain). Fed only on acorns form the holm oak, gall oak and cork oak, the Iberian Pig fats contains healthy mono-unsaturated fats high in Oleic Acid which reduce levels of bad cholesterol (LDL) and increase levels of the good stuff (HDL). Only olive oil fat has more oleic acid than the Iberico Pig fat, hence the Iberico Pig is known as "The olive tree with four legs!".
