The chef Patron of Malta's 'New Madras' Indian restaurant is Vellai Chamy Muthuraman. 'Muthu', as he is affectionately known by his clients, began his extensive Indian culinary career in 1981 in the southern Indian region of Chennai. From here, Muthu explored other regions of India, expanding his culinary skills in many kitchens, from the southern areas of Chennai to the western coastal regions of Mangaluru. His work then caught the eyes (and stomachs ) of one of India's most prestigious hotels, the 'Taj Coromandel', in Chennai, where he then worked until he moved to the United Arab Emirates as a chef with Emirates airlines flight catering. In 2005, Muthu moved to Malta, where he opening the 'New Madras', located in Bugibba. New Madras' menu is made up of specially selected dishes from different regions of India where Muthu worked. As the restaurant clientele increased, Muthuraman's son Karthick, joined as front on house, and so, 'New Madras' is now a a family run business.
