Quercus takes its name from the California Coastal Oaks that sorrowns the restaurant, on a rustic construction situated on famous wine country Valle de Guadalupe, opening its doors back on 2013, it was the materialization of a project owner Fred Cota had in mind for more that a decade, one that convine the true regional conncept and character of the Baja native cook. Binational, growing up in a society thats multy cultural by the great diversity of its habitants background coming from all corners of the world, it was clear for him that as regional cooks, not bound to a particular cuisine, our identity has the freedom to create dishes forever fussing thecnics, styles and ingridients from alll known regional cuisines and styles creating a ever evolving cuisine that represents the true nature of the region, that of the lands of the Californias. This is the landmark restaurat that set the standart, creating the concept name"Cocina Caliterranea", Caliterranean cuisine
